Salted codfish is one of the most typical and basic ingredient in the Portuguese cuisine. For us there are 1001 ways of cooking it... most of the times with olive oil, garlic, onions, parsley and potatoes. I guess good quality salted cod is hard to find outside the Mediterranean countries... but if you have the chance, here goes one of my favourite recipes. Salted Cod in the Oven.
 

Ingredients:

4 chunks of dried salt cod,
6 garlic cloves, finely chopped
3 onions
A lot of olive oil
Potatoes
Milk
Pepper and Salt

 

Preparation:-Before

Soak the codfish in cold water for 24-48 hours (depending on the size of the chunks), changing water every 12 hours.
After soaking, at room temperature, the cod should be soft. Drain and rinse. Place the fish into a bowl, with a little bit of milk and pepper, and leave it for an hour.

Place the cod into an oven tray. Spread the garlic and onions on the top and on thesides. Add olive oil generously (meaning: a lot). Put it into the oven for 40 minutes (at some point you might want to put a foiling paper on the top to avoid the onions getting burnt). Serve with the oven baked potatoes and a good red wine.

This is a simple version. You might want to add chopped parsley or crumbled Broa (typical Portuguese bread) on top of the cod.
